GIM Food Expert Dr. Mirjam Hauser with an Article in Swiss Magazine “Die Volkswirtschaft”
In April 2016, GIM Senior Research Manager and food expert Dr. Mirjam Hauser has published an article (only available in German and French) in the Swiss business magazine Die Volkswirtschaft. The article focuses on the changing needs and value concepts of discerning consumers in Switzerland regarding the topic of food and on current food trends.
Due to the fact that users have become more informed and discerning, the demonstrative consumption behaviour of the past decades has by now been replaced by the topics of sustainability and understatement. Particularly when it comes to nutrition, the Swiss consumers’ increased demands become apparent: they want healthy products that are manufactured in fair trade conditions and for this reason they also demand completely transparent value added chains regarding their food. The article also deals with current developments and changes in consumers’ consumption and dietary behaviour which can be expected in future due to the digital revolution and technologization of our everyday lives.
