    “The future of pastries” - Puratos symposium, June 3 and 4, St Vith, Belgium

    During the last decades the bakery industry has undergone fundamental changes. GIM market researchers Hanna Knorr and Manuela Geier talk about “The generation 50+ and the metamorphosis of the menu”.

    Based on years of personal experience, regular information seeking and a considerable degree of self-reflection, women and men aged 50+ are consumer experts in the areas of health and nutrition. As an essential part of their menu the ‘everyday bread’ plays an important role in their diet. Yet, where do people aged 50+ go shopping for their bread? Which criteria are important when deciding for a product and how important are ingredients, prices or the factor of wellness beside smell and taste?
    In a get together with people aged 50+ via the GIM Agora forum*, Hanna Knorr and Manuela Geier have gained deep insights into the preferences and desires of this generation regarding bread and pastries.

    *GIM Agora: recently developed GIM 50+ online platform which provides a framework for a selected panel consisting of four different GIM segments. This panel allows for quick, inexpensive and differentiated answers.
